Indian Butter Chicken

A creamy, richly spiced North Indian chicken curry cooked in tomato-butter gravy.

Ingredients
  

  • 500 gram chicken (boneless, cut into cubes)
  • 2 tbsp butter
  • 2 onions, finely chopped
  • 2 tomatoes, pureed

Method
 

  1. Marinate chicken: In a bowl, combine chicken cubes, yogurt, a pinch of turmeric, red chili powder, and salt. Let it marinate for at least 30 minutes (or up to 2 hours).
    Cook onions: In a pan, heat oil + butter. Add chopped onions and sauté till golden brown.
    Add ginger-garlic & spices: Add ginger-garlic paste, slit green chili, and sauté until raw smell goes. Then add red chili, coriander, turmeric.
    Tomato puree: Pour in tomato puree, cook until oil separates.
    Add chicken: Add marinated chicken and cook for 5–7 minutes, stirring gently.
    Cream & kasuri methi: Add fresh cream and crushed kasuri methi, simmer for 5 minutes.
    Garnish & serve: Garnish with fresh cilantro. Serve hot with naan, roti or rice.
