Aloo Gobi

Dry curry of potatoes and cauliflower, spiced with cumin—simple, vegan everyday staple.

Ingredients
  

  • 4 Potatoes (cubed) Peeled
  • 1 Cauliflower (florets)
  • 2 tbsp Oil Vegetable
  • 1 tbsp Cumin seeds
  • 1 tbsp Turmeric powder
  • 1 tbsp Chili powder Adjust for spice
  • 2 tbsp SALT Adjust for taste

Method
 

  1. Prep veggies: Boil potato cubes 5 mins until half-cooked; blanch cauliflower 2 mins. Drain.
    Heat oil: In wok or pan, add oil, sizzle cumin seeds 30 secs.
    Add spices: Stir in turmeric, chili, coriander powders, then add potatoes and cauliflower.
    Cook covered: Stir-fry on medium 10 mins, uncovered last 5 for crispiness. Add salt.
    Garnish & serve: Top with cilantro. Enjoy as side or with roti.
    Recipe Notes: For softer texture, cover longer. Vegan and gluten-free!
