Ingredients
  

  • 1 cup Basmati rice Soaked 15 mins
  • 2 cups Mixed veggies (carrots, peas, beans) Chopped
  • 1 medium Onion (sliced)
  • 2 tbsp Oil or ghee
  • 1 tsp Biryani masala Or garam masala
  • ½ tsp Saffron (soaked in milk) For color
  • 2 cups Water

Method
 

  1. Fry base: Heat oil, sauté onion until golden (5 mins). Add veggies, biryani masala, cook 5 mins.
    Add rice: Drain rice, layer over veggies. Add yogurt, salt, water.
    Cook: Bring to boil, then simmer covered 15 mins on low (dum style).
    Infuse: Drizzle saffron milk on top, let steam 5 mins off-heat.
    Fluff & serve: Mix gently, garnish with fried onions.
