- 1 cup Basmati rice Soaked 15 mins
- 2 cups Mixed veggies (carrots, peas, beans) Chopped
- 1 medium Onion (sliced)
- 2 tbsp Oil or ghee
- 1 tsp Biryani masala Or garam masala
- ½ tsp Saffron (soaked in milk) For color
- 2 cups Water
Fry base: Heat oil, sauté onion until golden (5 mins). Add veggies, biryani masala, cook 5 mins.Add rice: Drain rice, layer over veggies. Add yogurt, salt, water.Cook: Bring to boil, then simmer covered 15 mins on low (dum style).Infuse: Drizzle saffron milk on top, let steam 5 mins off-heat.Fluff & serve: Mix gently, garnish with fried onions.
