2cupsbasmati rice (soaked)
1bay leaf
4green cardamom pods

Instructions
In a large bowl, mix chicken with yogurt, ginger‑garlic paste, turmeric, red chilli powder, and salt; set aside to marinate for at least 30 minutes.
Parboil the soaked basmati rice with bay leaf, cardamom, cloves, cinnamon and salt until 80% cooked. Drain and set aside.
Heat oil in a heavy pan; add marinated chicken and cook until it starts to brown and release oil.
Layer the partially cooked rice over the chicken in the pan. Sprinkle some fried onions and fresh herbs (optional).
Cover tightly with a lid, reduce heat and cook on low (dum) for 20–25 minutes until chicken and rice are fully done.
Fluff gently before serving. Serve hot with raita or boiled eggs.
