Chicken Biryani

Ingredients

Marination

  • 500 g chicken pieces
  • 1 cup yogurt
  • 2 tsp ginger‑garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • salt (to taste)

Rice & Spices

  • 2 cups basmati rice (soaked)
  • 1 bay leaf
  • 4 green cardamom pods
  • 6 cloves
  • 1 cinnamon stick

Instructions

  • In a large bowl, mix chicken with yogurt, ginger‑garlic paste, turmeric, red chilli powder, and salt; set aside to marinate for at least 30 minutes.
  • Parboil the soaked basmati rice with bay leaf, cardamom, cloves, cinnamon and salt until 80% cooked. Drain and set aside.
  • Heat oil in a heavy pan; add marinated chicken and cook until it starts to brown and release oil.
  • Layer the partially cooked rice over the chicken in the pan. Sprinkle some fried onions and fresh herbs (optional).
  • Cover tightly with a lid, reduce heat and cook on low (dum) for 20–25 minutes until chicken and rice are fully done.
  • Fluff gently before serving. Serve hot with raita or boiled eggs.
