
Chicken Biryani
Aromatic and flavorful chicken biryani layered with marinated chicken and spiced basmati rice — a perfect main dish for special occasions or family meals.

Ingredients
Marination
- 500 g chicken pieces
- 1 cup yogurt
- 2 tsp ginger‑garlic paste
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- salt (to taste)
Rice & Spices
- 2 cups basmati rice (soaked)
- 1 bay leaf
- 4 green cardamom pods
- 6 cloves
- 1 cinnamon stick
Instructions
- In a large bowl, mix chicken with yogurt, ginger‑garlic paste, turmeric, red chilli powder, and salt; set aside to marinate for at least 30 minutes.
- Parboil the soaked basmati rice with bay leaf, cardamom, cloves, cinnamon and salt until 80% cooked. Drain and set aside.
- Heat oil in a heavy pan; add marinated chicken and cook until it starts to brown and release oil.
- Layer the partially cooked rice over the chicken in the pan. Sprinkle some fried onions and fresh herbs (optional).
- Cover tightly with a lid, reduce heat and cook on low (dum) for 20–25 minutes until chicken and rice are fully done.
- Fluff gently before serving. Serve hot with raita or boiled eggs.
