- Prep veggies: Boil potato cubes 5 mins until half-cooked; blanch cauliflower 2 mins. Drain.Heat oil: In wok or pan, add oil, sizzle cumin seeds 30 secs.Add spices: Stir in turmeric, chili, coriander powders, then add potatoes and cauliflower.Cook covered: Stir-fry on medium 10 mins, uncovered last 5 for crispiness. Add salt.Garnish & serve: Top with cilantro. Enjoy as side or with roti.Recipe Notes: For softer texture, cover longer. Vegan and gluten-free!
